Totally out of my comfort zone. Seared whole mule deer tenders in hot butter, set aside and sauteed shallots, butter, mustard, Worcestershire sauce and cognac until uniform. Added sliced tenders back for two mins. Served with mixed small potatoes....... didn't have enough space for potatoes.
