Taxidermists are artists, all with different strengths. You need to know what you find important in your mount. Then find the artist that loves creating what you seek in your mount. The actual mount is only a small portion of what you will perceive to be the best. From the way the ears sit, head turns, eyes are finished, the wood used on the base, the rock and vegetation, etc. Look into all the names mentioned, when you find one that has a passion that matches your ideal mount, then you have found the "best".
Interview them about your idea. Most "can" create your vision. Find the one that is the most energetic about what you are asking. Look for small hints that they may not be 100% bought into your idea. The little things will make the difference in exceeding your expectations. Clarification questions are good...little nudges to modify your vision are the separators.
