Do you use Hickory or Alder chips ? I used Alder and the brine is Hi Country Wild Trout.
 
Salt, apple cider vinegar,water, and brown sugar for fish brine. I've always used alder for fish or jerkey. They're lookin good madness, what color was the meat when u started? The high country trout that feed on fresh water shrimp out here are orange meated and hard to beat!
 
1 part salt
2 parts brown sugar
3 parts water

Brine overnight, and smoke with fruit wood (peach, cherry, apple, apricot)

I just done up 4 shelves of these this weekend.

Lake trout smoked with peach wood.

Not sure it can get much better.
