Girls are polishing off the chicken scallopini and some new fresh breadsticks. Popcorn shrimp for me, and saving enough for a po' boy sammich tomorrow!!!

A market about 1/4 mile from me had the raw, smaller headless shrimp on sale this week for $3.49 lb. at the fish counter. We bought 3 lbs. & spread them out in a single layer on trays to flash freeze so they wouldn't all lump together in a ball of ice. We put different sized portions in smaller Ziplocs, then put them all in two large bags. Makes it easy to take out the amount needed without a need to defrost just like the ones we buy that are already frozen.
 
Yep, I'm a big fan of individually freezing stuff, and then vacuum sealing. They make nice flatter packages that stack better in the freezer, and save lots of room. I hate having to thaw out a big bunch of meat, and then plan 3 days worth of meals to use it up.
