cow bison

I am going on a buff hunt later this month. what are the average weight of a mature buff?....what is the best way to have it cut up?

You'll get about the same amount of meat off a cow bison as off a good-sized cow elk. The cow bison is larger, but has a heavier bone structure, larger head, heavier hide, etc. So it weighs more on the hoof, but the usable meat is about the same. A big bull can be three times as large as a cow.
