Chicken Lollipops, with Sweet BBQ Remoulade

Having to sit in the TV room and watch Weather Channel. My sister is dealing with all the flooding in their creek in Asheville NC, while watching the hurricane Helene come in to their house in Crystal River Fla. They just finished repairs and renovations from last years damaging hurricane Idalia!!

Hadn't played in the kitchen for a while, so decided on cheap Chicken Lollipops tonight, with fries and veggies. Made a tasty sweet relish BBQ remoulade that the wife really likes. My drumstick rack for the smoker is out in the RV, so just used a muffin tin in the oven.

What does the tin foil on the drumstick do?

Keeps from burning the end of the bone, leaves it prettier, and allows me to handle it without getting my fingers all greasy
