... in a blanket of bacon last night. The shrimp are first butterflied, then folded back over a hunk of pepper cheese, wrapped in a whole piece of bacon & skewered with toothpicks to keep them together. A few mins. under the broiler melts the cheese & cooks the bacon a bit. Works best with the larger 15-20 count shrimp. Taters, corn, a mixed salad & glass of zin are the perfect complements.
