Just curious?? What is your favorite thing to do with antelope meat. I think mine has become, to have it made into jalapeno cheddar salomi (sorry,it must be late. Can't spell salomi) It's not just me, everyone that tries mine wants more. Its been great to carry for snacks and lunch while hunting for other critters.

Mesquite marinate and grill it. Seems like anything off the grill is better.

Roast it on a plank of cedar wood. Throw the meat away and eat the cedar. Yum! Yum!

Just had some lope steaks last night for dinner, fried in pan w/teriaki sauce, onion salt and garlic salt till medium served with stir fried veggies and baked tater.

just like you we ground the meat then mix with pork and make jalepeno cheddar sticks. Just love them!!!!

I had two hind quarters smoke like you would do pork hams.It is delicious. The buther shop by me charged me $16 . I think it is well worth it.

Jerky, summer sausage, burger ground up with bacon, steaks you name it. I think antelope meat is way good if you take care of it.
