Grizz bear country - yes, I quarter, bag, and hang or cover them. I pepper the bag as well. Keep 'em 20-30 yards away from carcass.

No grizz country I:
Warm (archery) - bag and hang in shade or elevate on branches and cover with leafy branches/pine branches AND mix citric acid with water spread over bag to keep flies off.

Cold - Bag 'em and just keep 'em out of sun.

Hopefully be doing that a couple times this fall again!
