I did a google search and found another one from Kentucky. This one has an article with it. The people in the know claim it's a condition called leucism, a loss of pigmentation.

I don't see pink eyes....Those birds appear to exhibit albinism rather than leucism.

The reason I said albinism rather than leucism is a leucistic bird has patches of white inter mixed with their normal plumage color. The two turkeys shown did not have that.I don't see pink eyes....
