Which weight should I be using? Currently, I'm using a 100gr. I shoot a Switchback XT, set at around 64 pounds, with Easton Axis 440 arrow.

It all depends on what total arrow weight you want for your setup and how the spine of your arrows match up. The 100 grain will shoot flatter and if you move up to 125 grain you will probably be underspined with those arrows, you would either need to drop draw weight or drop back to 100 grain.
I shoot 29" 70lbs with axis 340's cut to 28.5" and 125 grain tips for a total arrow weight of 442 grains shot at 280 fps and that works for my set up.
