Heading out on my LE elk hunt. Thought I would whip this up. It’s phenomenal on just about anything.
This is double recipe.
2 purple onions
2 red peppers
2 yellow peppers
2 orange peppers
2 green peppers
3 jalapeño
2 cans sweet corn
2 cans pinto beans
2 cans black beans
2 cans black eyed peas
6 cloves garlic
1 head of cilantro
Two cans hot Rotel
Dressing: 1/3 cup white wine vinegar
1/3 cup rice wine vinegar
2/3 cup good olive oil
Tablespoon chili powder
Tablespoon cumin
Salt pepper to taste.
Tip I mix the dressing and only combine with veggies what can be consumed that day. Helps to keep the veggies from getting watery. Tacos, eggs, rice or just scoop chips. Great fresh treat on the mountain.

We have made it, It’s pretty good stuff. No cowboy would have ever though of/made that!! Wonder who thought of that name! Haha, Happy hunting
 
Looks great. How well, or long, does it keep when refrigerated?
About 10 days max. I pat everything fairly dry before putting in the Tupperware. I think the key is adding dressing to only a small portion at a time as needed.
