Hatch Chili Arrives

My annual Hatch Chili delivery has arrived on one of the hottest days of the year. I'll bet then chili is just as hot as I get the very hot. I'll be roasting chili in the heat tomorrow morning early and try and get it all vacuumed packed and in the freezer by tomorrow night
Fresh Chili Verde this week can't wait I make the hottest chili around. My family loves it and everyone eats it including my grandkids. We always laugh when eating it because it's so hot but it doesn't stop anyone although they do eat a lot more flour tortillas LOL

Which variety of chile was it?
I'm not sure Beanman I always just order the Very Hot I think it starts with an S
It did come early this year I usually don't get it until August but the Chili's are the best I have ever got from Hatch Full bodied and thick.
 
I buy it as the folks are roasting it. There's a really nice roadside stand just outside Chama, NM that always has some in the barrel.
 
About 2 years ago, I bought some Hatch chiles at the l local store. On sale, labeled "mild." My 6 year old boy took a bite and got smoked! He was crying pretty hard, pretty quick. I took a bite--it was HOT! I felt bad for my boy, we had to get him something cold to drink fast, but he was feeling it bad until we got him something. Even then....
 
Good stuff. If you don't want the trouble of roasting them yourself, try this stuff.

I asked kind of tongue in cheek because there isn’t such a thing as a Hatch Chile. There are a whole bunch of varieties grown in a region of New Mexico near Hatch. It’s a well marketed trade name but not a type of chile.
 
I love this time. We’ve been buying green chili for years. It’s kind of a thing if you’re in New Mexico or Arizona. I’m in northern Arizona and the food is so good this time of year. We usually get a few hundred dollars of green chili every year and it will last until about now.

When I started, I tried mild because I was worried about the heat. It turned out that mild for me was weak. Still very good, but weak. Since then, I always start out with medium and hot. I like to sweat a little with the medium and the hot makes my nose run just the right amount.

You always get batches that are mixed up. Some of them say mild and they’re really medium and some of the hot are extra hot or medium and others are mixed up somehow. It’s not uncommon.

I can use the medium a snack and eat them kind of like candy. The hot need to be with pork or other dishes.

That 505 stuff is good. Especially when you’re back east and can’t get any good tasting green chili anywhere or just to put on a burger or sandwich.

Yes you are right the box says Hatch Chile because it comes from there but there are three different varieties that the Hatch Chile store sells
But the Chile from there is different in taste to other areas. I lived in Farmington New Mexico years ago and learned about how to tell how hot the Chile will be once roasted.
Bite the tip of a pepper and if it is hot raw it will be really hot once roasted.
Made a batch a year or so ago that I was the only one who could eat it. So I've toned it down
2 25lb boxes a year I'm roasting and vacuum packing all day today as it is under a 100
